Healthy Pancake

Breakfast is my favorite meal of the day. I’m a morning person and love to start my day off with coffee and something tasty + filling. During these colder months, I find myself wanting something warm, sweet, and comforting. I often start my day with a ‘healthy pancake’.

It’s quick to make and incorporates protein, fiber-filled carbohydrates, and healthy fat to keep you full until lunch.

What you will need: ½ large banana or 1 small, 1 egg, small handful of old fashion oats (approx. 2 Tbs.), and a sprinkle of cinnamon to your liking

Directions: Crack an egg into a bowl. Add banana and mash in with egg using the back of a fork. Toss in a small handful of oats and a dash of cinnamon. Heat pan over medium heat and coat with cooking spray. Pour the pancake mixture into skillet and wait for it to bubble over before flipping.

I like to top my pancake with Honey Cinnamon RX Peanut Butter. You can top with your likings—peanut butter, fresh berries, a drizzle of maple syrup, etc.
